Ingredients
- 100g Maesri Masaman Curry Paste
- 500ml coconut milk
- 5 Chicken Drumsticks
- 200g potatoes
- 4 large shallots
- 1 tbsp palm sugar
- 1 tbsp fish sauce
- Cinnamon sticks
- Star anise
- Roasted peanuts
Instruction
- Heat coconut milk in a pan until fragrant and the milk breaks.
- Fry Maesri Masaman Curry Paste in the coconut
- Add the chicken drumsticks to the pot along with the palm sugar and fish sauce
- Bring the mixture to a boil then reduce to a simmer.
- Add the potatoes, shallots to the pot.
- Cook until the chicken, potatoes, and shallots are tender, 15 to 20 minutes.
- Stir in the peanuts (if used).
