Chicken Khao Soi

Ingredients: 

Serving: 3-4

  • 250 ml coconut milk
  • 1 jar Maesri Khao Soi Curry Paste
  • 400 g chicken, cut into pieces
  • 350 ml coconut milk (additional)
  • Crispy fried Khao Soi noodles
  • Fresh coriander for garnish

Side Dishes: 

  • Sliced shallots
  • Pickled vegetables
  • Lime wedges
  • Fried dried red chili

Instructions:

  1. Heat 250 ml of coconut milk in a wok until it begins to boil. Add Maesri Khao Soi Curry Paste and stir well to combine. Add the chicken pieces and stir until well coated.
  2. Gradually pour in the remaining 350 ml of coconut milk. Bring the mixture to a simmer and cook over medium heat until the chicken is fully cooked and tender.
  3. Serve the curry over cooked Khao Soi noodles. Top with crispy fried Khao Soi noodles and garnish with fresh coriander.
  4. Enjoy with side dishes such as sliced shallots, pickled vegetables, lime wedges, and fried dried red chili.

Tip: For extra flavour, add a spoonful of Maesri Ground Chilli in Soya Bean Oil to your bowl, just like the locals!
