Instructions:
- Heat 250 ml of coconut milk in a wok until it begins to boil. Add Maesri Khao Soi Curry Paste and stir well to combine. Add the chicken pieces and stir until well coated.
- Gradually pour in the remaining 350 ml of coconut milk. Bring the mixture to a simmer and cook over medium heat until the chicken is fully cooked and tender.
- Serve the curry over cooked Khao Soi noodles. Top with crispy fried Khao Soi noodles and garnish with fresh coriander.
- Enjoy with side dishes such as sliced shallots, pickled vegetables, lime wedges, and fried dried red chili.
Tip: For extra flavour, add a spoonful of Maesri Ground Chilli in Soya Bean Oil to your bowl, just like the locals!
