Masaman Curry Chicken

Ingredients

  • 100g Maesri Masaman Curry Paste
  • 500ml coconut milk
  • 5 Chicken Drumsticks
  • 200g potatoes
  • 4 large shallots
  • 1 tbsp palm sugar
  • 1 tbsp fish sauce
  • Cinnamon sticks
  • Star anise
  • Roasted peanuts

Instruction

  1. Heat coconut milk in a pan until fragrant and the milk breaks.
  2. Fry Maesri Masaman Curry Paste in the coconut
  3. Add the chicken drumsticks to the pot along with the palm sugar and fish sauce
  4. Bring the mixture to a boil then reduce to a simmer.
  5. Add the potatoes, shallots to the pot.
  6. Cook until the chicken, potatoes, and shallots are tender, 15 to 20 minutes.
  7. Stir in the peanuts (if used).
