A rich and aromatic Thai stir-fry made with our flavourful Maesri Prik Khing Curry Paste — perfect for pairing with your favourite protein and crisp vegetables.
Serves: 5–6
Ingredients:
- 1 can Maesri Prik Khing Curry Paste 114g
- 5 tbsp cooking oil
- 250g of your preferred protein (pork, chicken, or tofu)
- 400g yardlong beans, cut into bite-sized pieces
- 8 tbsp water (divided)
- 5 kaffir lime leaves, torn
- 2–3 tbsp sugar (to taste)
- 1.5–2 tbsp fish sauce (to taste)
- Shredded kaffir lime leaves (for garnish)
- Fresh red chili slices (for garnish)
- Crushed roasted peanuts (for garnish)
Instructions:
- Heat the cooking oil in a wok over medium heat.
- Add the entire can of Maesri Prik Khing Curry Paste and stir-fry until fragrant.
- Add your preferred protein and 5 tablespoons of water. Stir-fry until the protein is fully cooked.
- Add the beans, the remaining water, and torn kaffir lime leaves. Stir in the sugar and fish sauce. Continue stir-frying until the beans are tender but still crisp.
- Garnish with shredded kaffir lime leaves, chili slices, and crushed peanuts.
Serve hot with steamed jasmine rice.
