One-Pan Red Curry Chicken x Beans recipe 🍛 5 minutes of prep and minimal ingredients is all it takes to make this delicious meal for 4!
Save this one if you’re looking for an easy weeknight dinner that tastes waaaay more rewarding than the effort required. Everything gets thrown into one tray, the sauce takes about 30 seconds to mix together, and the oven does all the work from there. Creamy beans and moist chicken in a rich Thai red curry sauce (I used half a jar of the new @maesriaustralia red curry paste – the paste is already pre-fried so literally perfect for oven/tray bake recipes!). Recipe 👇 (serves 4)
Ingredients
3 x 400g cans cannellini beans
1 onion (sliced)
5 thin slices lime
5 kaffir lime leaves (torn)
6-8 chicken thighs (bone-in, skin-on)
Sauce
110g @maesriaustralia red curry paste
2-3 Tbsp fish sauce (or soy sauce)
400ml coconut cream
Garnish: sliced red chillies, chopped coriander leaves
Method
1) Preheat oven to 200C|400F. Add cannellini beans, onion, lime slices and kaffir lime leaves to a large baking dish. Nestle chicken thighs on top.
2) In a bowl or measuring jug, mix red curry paste, coconut cream and fish sauce until smooth. Pour over the chicken.
3) Bake for 40 minutes. For the final 5-10 minutes, turn oven to grill/broil and occasionally baste the chicken with the sauce (keeping an eye on it) until the chicken skin is golden and slightly charred. Finish with sliced chillies and coriander and serve straight from the tray.
