Salmon Chu Chee

Ingredients:

Serving: 6.

  • 1 can Maesri Chu Chee curry paste(114g)
  • 250 ml coconut milk (for frying)
  • 700 g fish (your choice, e.g., salmon, snapper, or barramundi), cut into chunks
  • 400 ml coconut milk (for simmering)
  • 1/2 tbsp fish sauce
  • Minced kaffir lime leaves (for garnish)
  • Sliced fresh chilli (for garnish)

Instructions:

  1. Stir fry the Maesri Chu Chee curry paste with 250 ml of coconut milk in a pan for about 5 minutes, until fragrant.
  2. Add the fish to the pan and gradually pour in 400 ml of coconut milk.
  3. Simmer the mixture until the fish is cooked through.
  4. Add 1/2 tbsp of fish sauce to taste.
  5. Garnish with minced kaffir lime leaves and sliced fresh chilli.
