- 1 can Maesri Chu Chee curry paste(114g)
- 250 ml coconut milk (for frying)
- 700 g fish (your choice, e.g., salmon, snapper, or barramundi), cut into chunks
- 400 ml coconut milk (for simmering)
- 1/2 tbsp fish sauce
- Minced kaffir lime leaves (for garnish)
- Sliced fresh chilli (for garnish)
Instructions:
- Stir fry the Maesri Chu Chee curry paste with 250 ml of coconut milk in a pan for about 5 minutes, until fragrant.
- Add the fish to the pan and gradually pour in 400 ml of coconut milk.
- Simmer the mixture until the fish is cooked through.
- Add 1/2 tbsp of fish sauce to taste.
- Garnish with minced kaffir lime leaves and sliced fresh chilli.
